Quorn Pie





 This is a super easy pie that takes no time at all and is perfect if you're looking for a alternative to meat! 

Half A Bag Of Quorn Mince
1 Large Red Onion
2 Cloves Of Garlic 
1/3 Cup Peas
6 Mushrooms
Can Of Chopped Tomatoes
Half A Cup Of Water
4 Tablespoons Soy
Stock cube Flavouring Of Your Choice ( I went with vegetable ) 
Filo Pastry
Pepper & Salt To Your Taste

Theres no right or wrong amount of ingredients to this one, i love that you don't have to be uber precise with pies ... definitely my type of cooking. Next time i want to try it with tiny cubes of potatoes!
 I start the pan off on a low heat with a splash of oil and let my onions *cut in to half moons* cook until they soften then i'll throw in my mushrooms that have been quartered and the garlic which has been chopped in to itty bitty little pieces. Once the garlic starts to brown i add the quorn mince - as this doesn't need to brown and cook like normal beef mince you can just let it soak up the flavours of the onion and garlic and keep chucking the ingredients in! So next is the peas, soy, stock cube, tomatoes, water and finally the salt and pepper to taste. I then let it simmer away until the filling has thickened and all the flavours have developed. 
I then fill the dish and place my filo pastry on top! 
( I like to coat the top with a egg to get the crispy brown top and some mixed herbs ) 
35 minutes in the oven at 180 degrees and done.
