Banana Oat Pancakes

Banana Oat Pancakes

Banana oat pancakes are super easy, flourless and the main thing sugar free.
Such a amazing alternative... now i know i know i drenched mine in golden syrup but you can top yours with whatever you want!

Now they don't taste like the fat drippingly good ones but they are so awesome if you take them for what they are BANANA pancakes.

Okay so lets give you the recipe as thats what your here for...

Serves:
( when i'm cooking them just for me i half the recipe )
Ingredients
  • 2 bananas
  • 2 eggs
  • ½ cup rolled oats
  • ½ teaspoon baking powder
  • maple syrup, to serve (optional)
  • fresh fruit of your choice
  • Nuts of your choice ( I love toasted hazelnuts! )

In a blender, combine the peeled banana, eggs, oats and baking powder.
Allow to blend until the mixture is as smooth. Stand for 10-20 minutes until thickened slightly.
Heat a non-stick frying pan over medium heat.
Fry spoonfuls of the batter until golden brown on both sides ( I poured the batter in to a large cookie cutter to get perfect circles )
Serve with a drizzle of maple syrup and fresh fruit of your choice.

Good Luck!
Georgie
